Swede crisps

Ingredient: 
2 small swede 
100 g fresh brown of white breadcrumbs 
25 ml plain flour 
3 ml ground coriander 
3 ml ground cumin 
A pinch of cayenne pepper 
1 egg, beaten 
Salt to taste 
Freshly ground black pepper 
Oil, for deep frying 
Mongo chutney, to serve

Method:
Peel the swede, cut in half and slice thinly. Cook in a pan of boiling water for 4-5 minutes until just tender. Drain well.

Mix together the breadcrumbs, flour, paprika, coriander, cumin, cayenne pepper and seasoning. Dip the swede slice first in the egg and then in the breadcrumb mixture.
 
Heat the oil in a deep fryer or wok and fry the swede discs, In batches if necessary, for 4-5 minutes until golden on kitchen paper and serve with mango chutney.
