Ginger Ale Bellini

Ingredients:

1 white peach peeled and chopped
Sugar syrup to taste
Ginger ale
White sliced peach, for garnish
 

Preparation:

 
Place the peach in a blender and blend until smooth. Force the puree through a fine mesh sieve with the back of a spoon. Add a little sugar if peach puree is not sweet enough.
Fill the glass halfway with ginger ale. Carefully pour in the peach nectar, stirring gently. 
Top up with ginger ale garnish with a peach slice and serve.
