Hasselback potatoes

Ingredient:
8 large floury potatoes
60 g (2 oz) butter, melted, plus extra for greasing
Salt and black pepper
4 tbsp grated Parmesan cheese
Parsley, to garnish

Method:
Peel the potatoes, then slice them.

Put the potatoes into a buttered roasting tin and brush with the melted butter, separating the slices slightly so a little of the butter goes between them. Season with salt and pepper.

Bake in a preheated oven at 220℃ (200℃ fan, Gas 7) for 45 minutes, then sprinkle with the Parmesan cheese and return to the oven for 10-15 minutes or until the potatoes are tender.

Transfer to a warmed serving platter, garnish with parsley, and serve at once.
