Baked figs with Camembert

Ingredient:
175 g (6 oz) Camembert cheese
6 just-ripe large figs
12 slices of Parma ham

To serve:
6 tbsp olive oil
3 tbsp white wine vinegar
1 tsp Dijon mustard
2 tsp clear honey
Salt and black pepper
125 g (4 oz) mixed green salad leaves

Method:
Put the Camembert into the freezer, and freeze for about 30 minutes until hard. This will make it easier to cut the cheese into neat slices.

Sit the figs on a board, remove their stalks, and cut a cross in the stalk end of each one to come about halfway down the fruit. Cut the cheese into six thin slices, and push one slice into each cross so that the cheese sits inside the fig.

Wrap each fig in two slices of ham and place them on a baking tray.

Bake in a preheated oven at 200℃ (180℃ fan, Gas 6) for 10-12 minutes or until the ham is crisp and the cheese just beginning to melt.

Meanwhile, whisk the olive oil and vinegar in a salad bowl with the mustard and honey, and season with salt and pepper. Add the salad leaves, and toss until they are coated in the dressing.

Divide the salad leaves among six plates, and sit a fig in the middle of each pile of leaves. Serve immediately.
