Ingredient:
1.5 kg (3 lb) large baking potatoes, scrubbed
Black pepper
60 g (2 oz) butter
2 tbsp sunflower oil
Fresh thyme, to garnish

Method:
Cook the potatoes in boiling salted water for about 10 minutes until just tender. Drain the potatoes thoroughly, leave to cool, then peel. Cover and chill for about 4 hours.

Coarsely grate the potatoes into a large bowl, season with pepper, and stir carefully to mix.

Melt 30 g (1 oz) of the butter with 1 tbsp of the oil in a frying pan, add the grated potato, and flatten into a cake with a fish slice. Cook over a low heat for about 15 minutes until the base is crisp and golden brown. Turn on to a large buttered plate.

Melt the remaining butter and oil in the frying pan, slide in the potato cake, and cook for 5-10 minutes to brown the second side. Turn out on to a warmed platter, garnish, and serve cut into wedges.
