Spiced fruit salad

Ingredient:
500 g (1 lb) mixed ready-to-eat dried fruits, e.g. pears, peaches, mango, prunes, pineapple, figs, apple
About 900 ml (1 ½ pints) apple juice
2-3 star anise, to taste
1 vanilla pod
75 g (2 ½ oz) dried cranberries
75 g (2 ½ oz) dried cherries

Method:
Put the mixed frits into a saucepan with 900 ml (1 ½ pints) apple juice, the star anise, and vanilla pod. Bring to a boil and simmer gently for about 15 minutes.

Add the dried cranberries and cherries to the pan and continue cooking for about 15 minutes, adding more apple juice (or water) if necessary. Serve hot or cold.
