Ratatouille

Ingredient:
4 tbsp olive oil
1 large onion, sliced
1 large garlic clove, crushed
1 large aubergine, halved lengthways and cut into 1 cm (1/2 in) slices
4 courgettes, halved lengthways and sliced
6 juicy ripe tomatoes, sliced
1 large red pepper, halved, deseeded, and sliced
1 tsp caster sugar
Salt and black pepper
1 tbsp chopped fresh basil, to garnish

Method:
Heat the olive oil in a large frying pan, add the onion and garlic, and cook gently, stirring occasionally, for 3-5 minutes until softened.

Add the aubergine slices, cover, and simmer gently for 20 minutes.

Add the courgettes, tomatoes, red pepper, and sugar. Season with salt and pepper. Cover and cook gently, stirring occasionally, for 30 minutes or until the vegetables are soft.

Taste for seasoning and serve hot or cold, sprinkled with the chopped fresh basil.
