French-style braised beef

Ingredient:
1 kg (2 lb) piece of lean braising steak
2 tbsp olive oil
125 g (4 oz) piece of lean bacon, cut into strips
1 onion, sliced
250 g (8 oz) carrots, thickly sliced
250 g (8 oz) mushrooms, quartered
500 g (1 lb) tomatoes, chopped
125 g (4 oz) pitted black olives
600 ml (1 pint) beef stock
Salt and black pepper
Parsley, to garnish

Marinade:
500 ml (16 fl oz) red wine
3 tbsp red wine vinegar
2 large garlic cloves
1 strip of orange zest
1 bouquet garni

Method:
Make the marinade: combine the wine, vinegar, garlic, orange zest, and bouquet garni. Add the beef, cover, and leave to marinate in the refrigerator overnight.

Remove the beef the marinade and pat dry with paper towels. Strain the marinade and reserve. Heat the oil in a large flameproof casserole, add the beef and bacon, and brown all over. Lift out and drain on paper towels.

Add the onion, carrots, and mushrooms and cook, stirring, for 5 minutes or until lightly browned.

Add the beef, bacon tomatoes, olives, and reserved marinade. Pour in sufficient stock to cover the meat and season with salt and pepper.

Bring to a boil, cover tightly, and cook in a preheated oven at 180℃ (160℃ fan, Gas 4) for 1 ½ - 2 hours or until the meat is very tender.
Slice the meat and arrange on a warmed platter with the vegetables. Skim the sauce and pour over the meat. Garnish with parsley before serving.
