Italian fennel

Ingredient:
4 fennel bulbs, trimmed and quartered lengthways
salt and balck pepper
butter and black pepper
butter for greasing
250 g (8 oz) mozzarella cheese, grated
chopped parsley, to garnish

method:

ook the fennel in boiling salted water for 3-5 minutes until just tender. drain thoroughly.

Butter a shallow ovenproof dish. add the fennel and season with salt and pepper. sprinkle the grated mozzarella cheese on top.

Bake in a preheated oven at 200℃ (180℃ fan, Gas 6) for 15-20 minutes until the cheese topping is golden and bubbling. sprinkle with chopped parsley, and serve hot.
