Turkey to go

Ingredient:
About 750 g (1 ½ lb) turkey breast fillets, cut into thin strips
1 tsp ground coriander
1 tsp ground cumin
Salt and black pepper
12 soft tortilla wraps
About 2 tbsp sunflower oil
1 large red pepper, halved desseded, and thinly sliced

To serve
Tomato salsa or mango chutney
Shredded romaine lettuce

Method:
Put the turkey strips in a bowl with the coriander and cumin. Season with salt and pepper, then mix well to coat the turkey in the spices. Cover and marinate in the refrigerator for about 30 minutes, more if time allows.

When you are ready to cook the turkey, warm the tortillas. Heat the oil in a wok or large frying pan and fry the turkey in batches with the red pepper strips until golden brown and cooked through, for about 4 minutes. You may need to add more oil with each batch.

Arrange the tortillas, turkey and pepper mixture, salsa or chutney, and lettuce together on a serving tray. Let each person spread their tortillas with the salsa or chutney, and add turkey, peppers, and lettuce as desired, then roll each one into a fat cigar shape. The filled tortillas are easy to eat if they are sliced in half on the diagonal.
