Herbed roasted tomatoes

Ingredient:
500 g (1 lb) cherry tomatoes
Fresh herb sprigs, to garnish

Herb butter
45 g (1 ½ oz) butter, softened
2 tbsp chopped fresh herbs
1 garlic clove, crushed
½ tsp lemon juice
Salt and black pepper

Method:
Arrange the tomatoes in a single layer in an ovenproof. Roast in a preheated oven at 230℃ (210℃ fan, Gas 8) for 15-20 minutes until the tomatoes are tender but still retain their shape.

Meanwhile, make the herb butter: put the butter into a small bowl and beat in the herbs, garlic, and lemon juice. Season with salt and pepper. Garnish and serve hot, dotted with the herb butter.
