Exotic Mushrooms Subzi

Ingredient:

2 tablespoons olive oil
1 teaspoon nigella seeds
4 garlic cloves, finely chopped
2 small onions, cut into quarters and pulled apart
1 tablespoon fresh root ginger, grated
1 green chilli, finely chopped
1 teaspoon turmeric
3/4 teaspoon salt, or to taste
2 tomatoes cut into quarters
250g exotic fresh mushrooms

Method: 

Pour the olive oil into a large frying pan, add the nigella seeds and cook over a low-medium heat until the seeds begin to pop – this should take no longer than 2–3 minutes. Remove the pan from the heat and allow the oil to cool for a moment or two.
Add the garlic to the pan and cook over a medium heat until it begins to sizzle. Now add the onions, ginger and chilli and fry until the garlic and ginger are golden brown in colour and the onions are almost transparent, stirring frequently – this should take no more than 5–10 minutes.
Add the turmeric and salt and continue to cook for 20 seconds, stirring all the time. Add the tomatoes and cook until soft, stirring frequently – this should take no longer than 5 minutes.
In the meantime, wipe the mushrooms clean; do not wash.
Once the tomatoes are ready, add the mushrooms, mix well and cook over a low heat, covered, for 10 minutes, stirring occasionally.
Serve with your choice of sides.
