Corn Oats Soup

Ingredients:

3 ears of corn on the cob
1 Packet Saffola Masala Oats Veggie Twist
2 small leeks, white part, finely chopped
1 spring onion, finely chopped
1 clove of garlic, grated
a small bunch of parsley, chopped
400 ml of vegetable stock
1 teaspoon whole black peppercorns, coarsely pounded
1 tablespoon of butter
salt to taste

Method:

To begin making the Sweet Corn Oat Soup Recipe, cut the kernels of corn from the cob and place them in a bowl
Using the back of your knife, scrape all the pulp and milk remaining on the cobs into the bowl with the kernels
Heat butter in a pressure cooker on medium heat, add the spring onions, leeks, garlic and sauté until the onions are tender
Next add in the salt, corn, the oats, the parsley and the vegetable stock. Cover the pressure cooker and cook the corn and oats until you heat 2 to 3 whistles
After about couple of whistles, turn off the heat and wait the pressure to release naturally. This will take about 10 minutes
Once the pressure is released, place the corn oat soup ingredients into the blender to make a smooth puree
Check the salt and spice levels and adjust to suit your taste
When you are ready to serve give the Sweet Corn Oat Soup a quick boil and serve it along with pounded black pepper sprinkled on the top of each bowl.
