Iced lime traybake

Ingredient:
 
175 g (6 oz) soft butter or baking spread, plus extra for greasing
175 g (6 oz) caster sugar
250 g (6 oz) self-raising flour
1(1/2 pint) tsp baking powder
3 eggs
3 tbsp milk
finely grated zest of 2 limes, plus extra to garnish

Icing
 250 g (8 oz) icing sugar
juice of 2 limes

 
Method:
 
Lightly grease the tin and line the bottom with baking parchment.

Combine all the cake ingredients in a large bowl and beat well for about 2 minutes or until smooth and thoroughly blended.


Turn into the prepared tin and level the surface. Bake in a preheated oven at 180°C (160°C fan, Gas 4) for 35-40 minutes until the cake is well risen, springy to the touch, and beginning to shrink away from the side of the cake tin.

Leave to cool slightly in the tin, then turn out on to a wire rack, peel off the lining paper, and cool.

Make the icing: sift the icing sugar into a bowl. Mix in enough of the lime juice to give a runny consistency. Pour over the cooled cake, spreading carefully with a palette knife and leave to set.

When cold, cut into squares, and serve with a little lime zest grated over the top.
