Parmesan Red Potatoes

Ingredient:

3-4 cup red potatoes
1 tbsp olive oil
2 clove garlic, minced
2 tsp dried oregano
1/2 cup (vegetarian) parmesan
2 tbsp fresh chives

Method:
Slice red potatoes into roughly 1/4" thick slices. In a large skillet, heat oil over medium heat. Add in garlic and potatoes and saute until potatoes begin to soften, Sprinkle in cheese and oregano and continue to cook until potatoes begin to brown on both sides, 15-25 minutes (depends on the thickness!). Remove from heat and serve warm.
