Punjabi Dhabas Still Rule Taste Buds
The only place where one can get 24×7 scrumptious fresh meals is none other than Punjabi Dhaba literally. Dhaba means a roadside restaurant, Since these Dhabas serve food originating from Punjab region they are also commonly called Punjabi Dhabas.
The Dhabas are roadside restaurants or cafes found on highways and on the outskirts of cities, towns, and villages. Dhabas were initially started by enterprising Punjabis to cater to the needs of truckers, who were also initially mostly people belonging to Punjabi community, for wholesome, clean, and hot authentic Punjabi food at any hour of the day or night as they characteristically offer 24/7 service.
Dhaba roadside eateries are now a common feature on the national and state highways. Earlier frequented only by truck drivers, today eating at a Dhaba is a day out picnic. Apparently, Punjabi Dhaba has become a part of the culture of the people belonging to various section of society.
It is said that, the first Punjabi Dhaba was probably established soon after the linking of the Indian cities by highways (national, state and village roads). Though no records can be cited as to the first Punjabi Dhaba, it can reasonably be assumed that such restaurants first flourished along the Grand Trunk Road which ran from Peshawar in the Punjab (now in Pakistan) through Amritsar and Delhi to Kolkata.
There is now a large network of the Punjabi emigrant community worldwide, and many Punjabis and people from other community have opened Dhabas in far lands.
Punjabi food served in Dhabhas is a delight to have. Earlier food was served to customers on big brass plate and drinks including water, lassi, milk or tea were served in a long brass glass. However as time changed the serving of food has modernized.
The Tandoor a barrel shaped clay or earthenware oven, makes the Punjabi cooking very special. The Punjabi meal served in a Dhaba could be Tandoori Rotis with Makhani Dal and Raita. Sweet Lassi is always a favourite after lunch or dinner.
