Cantaloupe Rum Cantaloupe

Ingredient:
1/4 cantaloupe
1 cup water
1/2 cup sugar
10 sprigs fresh mint
Each Mojito
2 oz. light rum
3 oz. cantaloupe syrup
Splash club soda
Cantaloupe balls, for garnish
Fresh mint, for garnish
Method:
Combine syrup ingredients in a small saucepan. Heat over medium heat until sugar is dissolved and liquid is hot. Use a potato masher or large fork to mash up cantaloupe pieces. When sugar is dissolved, remove from heat and let cool slowly.
Strain out solids from syrup and store refrigerated in an airtight container for up to 10 days.
To make a mojito, combine rum and cantaloupe syrup in a cocktail shaker with ice. Shake to chill. Strain over fresh ice in a glass and add a splash of club soda.
Garnish with fresh cantaloupe balls and fresh mint.
