Strawberry-Coconut Coladaritas Cream of Coconut

Ingredient:
1 cup sugar
1 cup water
1 1/2 cups strawberries, sliced
1/2 cup triple sec
1/2 cup tequila
1/2 cup fresh lime juice
1/2 cup coconut milk
1/2 cup cream of coconut
2 tbsp kosher salt
2 tbsp sugar
2 tbsp coconut, shredded
Method:
Combine sugar and water in a medium saucepan. Bring to a boil, and let sugar dissolve. Cool completely, and add strawberries. Puree in blender. Pour into another container.
In a blender, combine 1/2 cup strawberry puree, triple sec, tequila, lime juice, coconut milk, and cream of coconut, and 2 cups of ice. Puree until smooth.
Combine salt, sugar, and coconut on a plate. Using a lime slice, rim the edge of a glass with lime juice, and dip rim into sugar/salt mixture. Pour drink into glass and garnish with strawberries and lime wedges.
