Masala Aloo Baingan

Ingredients :
4-5 - Medium size brinjal (baingan)
4-5 - Potato
1/2 cup - Onion paste
1 tsp - Red chilli powder
1/4 tsp - Turmeric Powder
1 tsp - Garam masala
1 tsp - Whole spices powder
1 tsp - Coriander powder
2 tsp - Ginger garlic paste
1 -2 - Tomato, chopped
4-5 - Fenugreek (methi dana)
Salt to taste
Oil
1 tsp - Lemon juice
Coriander leaves for garnishing
4-5 - Medium size brinjal (baingan)
4-5 - Potato

1 tsp - Whole spices powder
1 tsp - Coriander powder
2 tsp - Ginger garlic paste
1 -2 - Tomato, chopped
4-5 - Fenugreek (methi dana)
Salt to taste

1 tsp - Lemon juice
Coriander leaves for garnishing
Method:
Peel and cut potato and brinjal in pieces. Soak in water and keep aside.
Heat oil in a pressure cooker add 4-5 methi dana and splutter for a minute on medium flame.
Then add onion paste, fry well until light golden.
Add coriander powder, red chilli powder, turmeric powder, ginger garlic paste and salt. Cook for few minutes.
Now add garam masala, whole spices masala and chopped tomato. Adjust water if needed
Cook the masala til oil seperation stage or for 20-25 minutes on medium flame. Stir occasionally
Add brinjal and potato pieces into the masala and saute well.
Pressure cook it upto 2-3 whistle or for 15-20 minutes on low flame.
Open the lid add water for curry, if needed and again cook for a minute.
Mix coriander leaves and lemon juice.
Serve hot with roti
