Sambhar - Kerala Style
Ingredients :
1 cup - potato, peeled and cut
1 - carrot, peeled and cut
2 -3 - drumsticks, cut into pieces
1 cup - tomato, chopped
1 cup - beans
3-4 - brinjal, cut into pieces
2 cup - Sambar/Toor Dal
1 - Onion, sliced
2 - Green chillies, slit
4-5 - Garlic Cloves
1 tsp - Red Chilly powder
1/4 tsp -Turmeric powder
2 tsp - Coriander Powder
Tamarind – gooseberry sized ball
1 bunch - coriander leaves, chopped
3 tsp - Sambar Powder
1/2 tsp - Mustard Seeds
3 - whole dry Red Chillies
8-10 - Curry Leaves
1/4 cup - Pearl Onions (diced)
a pinch of Asafoetida (Kayam)
Salt to taste
Oil
Water – As needed

1 bunch - coriander leaves, chopped
3 tsp - Sambar Powder
1/2 tsp - Mustard Seeds
3 - whole dry Red Chillies
8-10 - Curry Leaves
1/4 cup - Pearl Onions (diced)
a pinch of Asafoetida (Kayam)
Salt to taste
Oil
Water – As needed
Method :
Heat oil in a pressure cooker and saute the sliced onions, garlic and green chillies for a minutes.
Then add the diced vegetables and dal along with salt and turmeric powder.
Add required water and cover the lid and pressure cook the ingredients up to 2 -3 whistles on low flame or until dal and vegetable cooked completely.
Meanwhile soak tamarind in warm water for sometime, squeeze and take the extract from it. Keep aside.
Stir in the tamarind juice into the dal and vegetable mixture. Again put the cooked on the low medium flame.
Add chopped coriander leaves and and sprinkle asafoetida powder and cook for 2 more minutes.
Turn off the flame and keep aside.
For tadka - Heat oil in a wok and allow mustard seeds to splutter.
Add pearl onion,curry leaves and whole dry red chillies and fry for a minute.
Mix in the sambar powder, coriander powder and chilly powder and fry for 2 minutes on low flame.
Now pour the sambar to the wok and mix well for a few minutes.
Turn off the flame. sprinkle few chopped coriander leave.
Serve hot with idli or rice!!!
