Ingredients :
4 -Egg
3-4 - potato , boiled
1 - onion paste
2 tsp - ginger garlic paste
1 tsp - red chilli powder
1/4 tsp - turmeric powder
1 tsp - coriander powder
2 - tomato, chopped
4-5 - fenugreek seeds (Methi dana)
Salt to taste
Oil
Coriander Leaves for garnishing

  Method:

In a pan heat oil - splutter methi dana for few seconds  then add onion paste and fry.
Add ginger garlic paste, coriander powder, red chillli powder, turmeric powder and salt.
Cook for 8-10 minutes on medium flame.
Meanwhile boil eggs and remove their skin. peeled and cut potatoes into desire pieces.
Take another pan and heat oil. Fry Eggs carefully until golden.
In the same pan fry cubed potatoes for 2-3 minutes or until light golden.
Keep stirring the masala in between of all the process. Add warm water in the masala, if needed.
Cook the masala untill oil separates.
Then add fried eggs and potatoes and saute with the masala well.
Adjust water as per the required curry and garnish with coriander leaves.
Cook for 2-3 minutes and turn off the flame.
Serve hot with roti!!!
