Ingredients:
2 cup - Basmati rice
1 cup - Milk
Sugar - to taste
Salt to taste
2 tbsp - Ghee
1 tsp - Saffron (kesar)
8-10 -Cashew nuts (kaju), chopped
6-8 - Almond, chopped
10 -12 -Raisin (kismish)
2-3 - cloves
1 tsp – Green cardamom powder
A pinch of Nutmeg powder (jaiphal)
Orange food colour
few drops of kewra

Method :

Wash basmati rice and soak in water for half n hour.  Drain and keep aside.
Heat ghee in a thick bottom pan and gently fry almonds, cashewnuts and raisins.
Transfer to another plate and chopped finely.
Then adjust ghee if needed and add cloves and  rice in the same pan and saute for few minutes.
Add kesar, milk, water and salt to the rice. Stir well, cover and cook for about 15 minutes on a low flame.
Drain excess water.
Add sugar and cook on medium flame for 4-5 minutes.
Stir in the nutmeg and green cardamom powder, kewra drops and food colour. Mix well.
Cook till rice done completely.
Next, add the roasted dry fruits. Mix lightly.
Garnish with few dry fruits and serve hot.
