Ingredients:
  • 7-8 - Brinjals (small), slit into two pieces
  • 7-8 - Curry leaves
  • 2 - Tomatoes, chopped
  • 1 tbsp - Ginger garlic paste
  • 1 tsp - Red chili powder
  •  1 tsp - Coriander powder (dhaniya)
  • 1/4 tsp- Turmeric Powder (haldi)
  • 1/8 tsp - Hing
  • 1 tsp - Cumin seeds
  • 1 tsp-  Fennel Seeds (saunf)
  • 1/2 tsp - Nigela/Onion Seeds (kalonji)
  • 1/2 tsp - Fenugreek seeds (methi dana)
  •  1 tsp -Mustard Seeds (rai)
  • Salt to taste
  • Oil
  Method:
  • Heat oil in a pan and deep fry the baingan till they turn golden brown.
  • Once fried, take out the fried baingan into a bowl.
  • Meanwhile heat tawa and roast all spices like  saunf, kalonji, methi dana, cumin seeds and rai. Roast for about a minute and keep aside.
  • Then heat oil in a pan and saute ginger garlic paste.
  • Add curry leaves, hing and roasted ingredients. Saute for a  minute.
  • Now add chopped onions and tomatoes. Cook till tomatoes are soft.
  • Time to add turmeric powder, red chili powder, coriander powder and salt to taste. Mix well all the ingredients.
  • Add the fried baingan and cook on low flame until all the ingredients mix well.
  • Serve hot with roti.
