Mixed Vegetable Curry

       Serves 2-3 Persons       
       
        Ingredients
  • 1 potato ,washed peeled, cut lengthwise into 4 pieces , then crosswise into smalll disc
  • 5 French beans, washed, trimmed, cut into  ½ pieces
  • 1 carrot(gajar) ,washed cut into 2’’ –long piece, each piece is cut lengthwise into quarters, each quarter  diced minutely
  • 1 tomato ,diced into small pieces
  • 1’’ piece ginger(adrak),diced minutely
  • ¼ tsp turmeric( haldi) powder
  • 2 garlic (lasan) cloves,diced minutely
  • 1tsp/5gm coriander (dhaniya) powder
  • 1 clove (laung)
  • 1 small cinnamon (dalchini) stick
  • salt to taste
  • 1 tbsp/15 ml vegetable oil
  • 1 onion, finely chopped
  • 10 curry leaves (kadhi patta)
        Method
  • Immerse the cut potato in some water or else it will turn black.
  • Take a saucepan and add all the cut vegetables,
  • Pour about 2 cuos water.Add the turmeric powder, coriander powder, clove and cinnamon with the required amount of salt. When it comes to a rolling boil, lower the heat and cook, covered, till the vegetables are well done.
  • Hea the oil in another saucepan; add the onion and fry till dark golden brown. Add the curry leaves and stir for about 2 minutes. Pour in the vegetable curr; mix well. Serve hot.
