BREAKFAST

1.  Cucumber Juice with Ginger
Follow the recipe of Day 1. Substitute ash gourd with cucumber.

LUNCH

Mixed Pulse Soup

Ingredients:
25 gm green gram soaked overnight, washed
25 gm cowpeas, soaked overnight, washed
25 gm peas, dry, soaked overnight, wahed
½’’ piece ginger finely chopped
3 cloves garlic, finely chopped
1 green chilli, finely chopped
¼ tsp cumin seeds
¼ tsp turmeric powder
Salt to taste
Method :
Cook the pulses with ginger, garlic, green chilli, cumin seeds, turmeric powder and about 2 cups water for about 15-20 minutes. Turn off the heat and allow the pressure to release on its own. Put the pulse mix into a blender and blend. Strain, add salt and serve.

 
1.Sautéed Capsicum and Onion
Ingredients:
2 capsicums chopped into small squares
1 onion, chopped into small squares
2 cloves garlic finely chopped
2-3 black peppercorns crushed
¼ tsp cumin seeds, roasted
Salt to taste
 Method:
Saute the capsicum and onion in a pan with ½ cup water for about 5 minutes.
Add the garlic, crushed black pepper, roasted cumin seeds and salt; sauté for another 5 minutes. Remove and serve hot.

DINNER

Beetroot Soup
Ingredients:
1 beetroot small, washed, cut into small cubes
 ½ piece ginger
2 cloves garlic 
Salt taste
Method:
Put the beetroot into a pressure cooker. Add the ginger and garlic. Pour about 2 cups water and pressure cook till 2 whistles. Remove from heat and allow the pressure to release on its own. Pour the beetroot mix into a blender and blend well. Strain and add salt. The soup is ready to serve.
Serve hot.

2.Cabbage Thoran

Ingredients:
1/400gm cabbage (bandh gobhi),halved, cut into long, fine ½’’ –wide shreds, washed, drained
1 onion, chopped lengthwise into fine shreds
1 green chilli, chopped
½ tsp/2 gm cumin (jeera) seeds
2 tbsp  /30 gm coconut (nariyal), grated
¼ tsp turmeric (haldi) powder
salt to taste
1 ½ tsp/7 ½ ml vegetable oil
1 tsp/5 gm mustard seeds(rai)
1 dry red chilli (sookhi lal mirch), halved, seeds removed
10 curry leaves (kadhi patta), fresh
Method:
Combine the cabbage with the onion ,green chili, cumin seeds,coconut ,turmic powder and salt. mix all these thoroughly and leaves for about 10-150minutes.
Heat the oil in a saucepan; add the mustard seeds. When it splutters, add the dry red chilli turns into darker shade. Add the cabbage mixture and stir well.Lower the heat and cooked covered.
Stir once in a while and cook until the cabbage is barely limp.
Transfer into a dish and serve hot.
