1 small round lettuce, shredded
6 spring onions, chopped
60 g (2 oz) butter
1 tbsp chopped parsley
1 tsp caster sugar
500 g (1 lb) shelled fresh peas
4 tbsp water
Salt and black pepper
Line the bottom of a saucepan with the lettuce. Add the onions, butter, parsley, and sugar, and top with the peas.
Add the water, season with salt and pepper, and bring to a boil.
Simmer gently, uncovered, for 15-20 minutes until the liquid has evaporated and the peas are tender. Taste for seasoning and serve hot.
