Herb-roasted salmon

Ingredients:

4*150 g (5 oz) salmon tail fillets, skinned
Salt and black pepper
A little vegetable oil
125 g (4 oz) full-fat garlic and herb soft cheese
 

Topping:

30 g (1 oz) fresh white breadcrumbs
30 g (1 oz) mature Cheddar cheese, grated
2 tbsp chopped fresh flat-leaf parsley
Finely grated zest of 1 lime
 

To Serve:

Lemon wedges
Flat-leaf parsley sprigs
 

Method:

Season the salmon on both sides with salt and pepper. Place on lightly oiled baking parchment and spread with the soft cheese, not going quite to the edges.
 
Mix the topping ingredients together, adding seasoning to taste, then sprinkle over the salmon. (you can prepare ahead to this stage, cover salmon, and keep it in the refrigerator for up to 12 hours.)
 
Cook in preheated oven at 220c (200c fan, Gas 7) for 15 minutes or until the salmon is opaque and the flesh flakes easily. Serve with lemon and parsley.
