Breakfast Rice Pudding with Almonds, Honey and Fresh Fruit

2 tbsp basmati rice
A small handful of blanched almonds
1 tbsp honey
1.1 liters semi skimmed milk
A pinch of salt
Fresh fruit and extra blanched almonds and honey, to serve
Place all the ingredients into a deep, heavy-based saucepan and cook over a medium heat until the milk starts to boil.
Reduce to a low heat and simmer, uncovered, for 1 hour or until the milk has reduced by half, stirring frequently.
Serve warm or chilled, topped with fresh fruit, a few more almonds and a drizzle of extra honey.
