Ingredients :
250 gms - arbi
1/2 tsp - cumin Powder
1/4 tsp - ajwain (carom seeds)
1/2 tsp - black pepper, crushed
1/2 tsp - dry mango powder (amchur)
1 tsp - green chilli, chopped
1/2 tbsp - peanut oil
1 tbsp - chopped coriander or mint leaves
Rock salt to taste
Water

Method:

Pressure cook the arbi upto 2-3 whistles in a pressure cooker.
When the pressure settles down on its own, open the lid and check the doneness of the arbi.
When the arbi cools down or become warm, peel and then slice them. keep aside.
Heat peanut oil in a pan and add ajwain(carom seeds). Saute for a minute.
Then add the sliced arbi. stir and mix the arbi with the rest of the ingredients.
Cook for few minutes on a low flame.
Then add the following spices - crushed black pepper, cumin powder, green chili (chopped).
Stir and mix the spices with the arbi. season with rock salt.
Then add dry amchur powder. Stir and mix very well.
Saute and flip each piece to get an even roasting and browning of the arbi slices.
Switch off the flame and garnish with coriander leaves.
Serve arbi as side dish !!!!

Note : Arbi can also be baked. Please find below the procedure for the same:

Preheat oven at 400 degrees F. Put the dried arbi in a glass or ceramic baking dish. Drizzle Peanut oil generously on top ( not less than 4 tbsp).  Add all ingredients and toss everything nicely.
Bake uncovered in the oven for 30-35 minutes or until it is tender. Stir the arbi very gently after every 10 minutes to prevent it from sticking at the sides.
Remove from oven, when it is done.
Garnish with coriander leaves and serve hot.
