Sabudana Khichdi - Regular/Low Calorie - Navratri Special

Ingredients :
2 cup - Sabudana
2-3 - Boiled Potato , cubed
1 tsp - Cumin Seeds, crushed
2 tsp - Green Chilli, chopped
1/2 cup - Roasted Peanuts
Oil/Ghee
Rock salt - to taste
Coriander Leaves for garnishing, chopped
1 tsp - Lemon Juice
2 cup - Sabudana
2-3 - Boiled Potato , cubed
1 tsp - Cumin Seeds, crushed
2 tsp - Green Chilli, chopped
1/2 cup - Roasted Peanuts
Oil/Ghee
Rock salt - to taste
Coriander Leaves for garnishing, chopped
1 tsp - Lemon Juice
Method :
Wash sabudana properly under running water then soak sabudana in water for 2-3 hours or overnight as per requirement.
Once soaked then drain the excess water and let it drain for atleast 10 minutes (to avoid stickiness).Keep aside.
Heat oil in a wok, add cumin seeds and chopped green chilli. Saute for few seconds.
Then add cubed potatoes and fry well. Add roasted peanuts and saute.
Now add sabudana and rock salt and mix well with all ingredients.
Cook for 2-3 minutes (do not overcook).
Now add lemon juice and chopped coriander leaves.
Serve hot and enjoy the sabudana khichdi (Vrat Special)

Note : You can avoid oil by following the below mentioned procedure :

Now steam the soaked sabudana in a cloth for at least 4-5 minutes.
In a bowl mix roasted peanuts and cumin seeds, cubed potatoes , chopped green chilli , rock salt with soaked and drained sabudana.
Add coriander leaves and lemon juice.
Serve hot!!
