Ingredient:
1 slice of white bread, crusts removed
300 ml (1/2 pint) milk
30 g (1 oz) butter
1 large onion, chopped
2 garlic cloves, crushed

1 kg (2 lb) minced beef
1 tbsp medium-hot curry powder
90 g (3 oz) ready-to-eat dried apricots, coarsely chopped
90 g (3 oz) blanched almonds, coarsely chopped
2 tbsp fruit chutney 
1 tbsp lemon juice
Salt and black pepper
2 eggs
30 g (1 oz) flaked almonds

Method:
Put the bread into a shallow dish. Sprinkle over 2 tbsp of the milk and leave to soak for 5 minutes.

Meanwhile, melt the butter in a large frying pan, add the onion and garlic, and cook gently, stirring occasionally, for a few minutes until soft.

Increase the heat, add the beef, and cook, stirring, for 5 minutes or until browned. Spoon of any excess fat.

Add the curry powder and cook, stirring, for 2 minutes, add chopped apricots and almonds, the chutney, lemon juice, and salt and pepper to taste.

Mash the bread and milk in the dish, then stir into the minced beef. Turn into an ovenproof dish and bake in a preheated oven at 180c (160c fan, Gas 4) for 35 minutes.

Break the eggs into a bowl, and whisk in the remaining milk, and pepper to taste. Pour over the minced beef mixture, sprinkle with the flaked almonds, and bake for 25-30 minutes until the topping is set.
