Cabbage and mixed pepper stir-fry

Ingredient:

2-3 tbsp olive oil
1 large onion, finely sliced
6 celery stalks, sliced diagonally
2 red peppers, halved, deseeded, and cut into thin strips
1 yellow pepper, halved, deseeded, and cut into thin strips
175 g (6 oz) mushrooms, quartered
Salt and black pepper
1 small white cabbage, finely shredded


Method:

Heat 1 tbsp olive oil in a wok or large frying pan, add the sliced onion, and stir-fry over a high heat for about 2 minutes until beginning to brown.

Add the sliced celery and stir-fry for about 1 minute then lower the heat and stir-fry for 2 minutes.

Add another tablespoon of olive oil to the wok. When it is hot, add the peppers and mushrooms, season with salt and pepper, and stir-fry for 3 minutes.

Add the cabbage, with remaining oil if needed, and stir-fry for 2 minutes or until tender-crisp. Taste for seasoning.
